Ce proc\u00e9d\u00e9 conf\u00e8re au massepain son go\u00fbt incomparable. Lubeca est l&#8217;un des rares fabricants de p\u00e2tes d&#8217;amandes \u00e0 encore utiliser ce proc\u00e9d\u00e9 et \u00e0 obtenir ainsi le caract\u00e8re unique de sa p\u00e2te d&#8217;amande. Mais avant d&#8217;obtenir de la p\u00e2te d&#8217;amande, il faut bien entendu traiter les amandes brutes. C&#8217;elles sont nettoy\u00e9es, puis \u00e9chaud\u00e9es afin d&#8217;\u00e9liminer la pellicule brune naturellement pr\u00e9sente sur les amandes. Des proc\u00e9d\u00e9s de triage optiques permettent ensuite de retirer les amandes qui ne r\u00e9pondent parfaitement pas \u00e0 nos exigences \u00e9lev\u00e9es, et finalement des op\u00e9ratrices de productions retirent manuellement les derni\u00e8res amandes non conformes, ceci afin d&#8217;obtenir des amandes parfaitement blanchies.<\/p>\n<p>Bien entendu, chaque fabrication de p\u00e2te d&#8217;amandes s&#8217;accompagne d&#8217;une recette. Cette recette, soumise \u00e0 des r\u00e8gles strictes, est syst\u00e9matiquement enregistr\u00e9e dans notre logiciel de production informatis\u00e9. Et, conform\u00e9ment \u00e0 la recette finale souhait\u00e9e, les amandes sont pes\u00e9es, pr\u00e9broy\u00e9es et m\u00e9lang\u00e9es automatiquement avec du sucre et de l&#8217;eau.<\/p>\n<p>Ce n&#8217;est qu&#8217;ensuite qu&#8217;intervient la tradition plus que centenaire. Ainsi, la masse pr\u00e9broy\u00e9e est affin\u00e9e \u00e0 l&#8217;aide de broyeuses \u00e0 double paires de cylindres en granit et tournant en sens inverse. Les cylindres en granit conf\u00e8rent \u00e0 la p\u00e2te d&#8217;amandes une structure l\u00e9g\u00e8rement fibreuse, mais tout de m\u00eame consistante.[\/vc_column_text][vc_empty_space height=&#8221;30px&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text]La p\u00e2te d&#8217;amandes ainsi obtenue est ensuite chauff\u00e9e dans les cuves de torr\u00e9faction rotatives en cuivre ouvertes. Des ma\u00eetres torr\u00e9facteurs garantissent une torr\u00e9faction r\u00e9guli\u00e8re de la masse d&#8217;amandes brute, conform\u00e9ment \u00e0 la qualit\u00e9 recherch\u00e9e. Suite \u00e0 cette \u00e9tape de torr\u00e9faction, la p\u00e2te d&#8217;amandes est refroidie, fa\u00e7onn\u00e9e en blocs d&#8217;un poids adapt\u00e9 \u00e0 l&#8217;emballage final, puis emball\u00e9e sous film plastique herm\u00e9tique. Les blocs ainsi emball\u00e9s sont refroidis en quelques heures dans un entrep\u00f4t r\u00e9frig\u00e9r\u00e9 afin que les pr\u00e9cieux ar\u00f4mes d&#8217;amande ne soient pas alt\u00e9r\u00e9s en raison d&#8217;un refroidissement trop lent.<\/p>\n<p>Notre laboratoire de qualit\u00e9 interne surveille constamment la qualit\u00e9 du produit au cours de fabrication sur le plan
